Many novel fermentation processes are momentarily developed that allow use of side-streams for production of food grade proteins and lipids. These initiatives are a key aspect of the transition away form animal derived foods. Many of these processes unfortunately show challenges in the upscaling phase. In this project we address this issue by use of optical spectroscopy technology from a Dutch industrial partner that will allow simple visualization of the complex pattern from optical spectroscopy such that it allows determination of any deviations at the small versus the large scale and ensure timing of downstream processing is perfected. This is expected to greatly accelerate scaling initiatives in the fermentation space for alternative proteins and lipids.
