Summary
The main objective of CAMPIONE project is to explore the potential generated from fermenting carob pods and to lay the groundwork for potential new healthy applications for the chocolate industry and carob producers. The project will also look into unlocking the full potential of carob by characterising the seeds and proposing a future biorefinery process.
The outcomes of the project will lay the groundwork for carob producers to start diversifying and modernising their production, which, by extension, will allow the whole spectrum of the value chain and stakeholders to benefit from the potential of carob. Furthermore, the success of CAMPIONE project will be a stepping stone for a future larger PPS project, where the whole process will be optimised, the circularity approach will be adopted, the chocolate product will be thoroughly studied and the applications will be extensively tested.
