The purpose of the project is the development of new technologies for starch modification, with regard to the development of electrochemical oxidation routes and a bi-catalytic chemo-enzymatic route for carbohydrates, more particular starch. In total two different oxidation routes will be explored based on electrochemistry and the exploration of a bi-catalytic route which will involve a mild chemically crosslinking followed by enzymatic modification, in a cascading approach. The aim of these routes is to lower the salt burden with regard to the current state of the art chemical processes and to create new starch structures with enhanced functional properties. The impact of this project is high for the industry involved since the new clean technologies will be developed for the modification of carbohydrates, more particular starch, and at the same time reduce the costs for dealing with the high salt containing side streams.
